Zucchini Slice

Serves-8-10
Suitable for Gluten free if using Gluten Free Flour option

Ingredients

Method

  • 1 tablespoon olive oil
  • 1 onion,finely chopped
  • 2 gloves garlic,crushed
  • 4 rashers bacon,rind removed & chopped
  • 450g zucchini,grated
  • 200g Zany Zeus Creamy Feta,crumbled
  • 200g Zany Zeus Ricotta
  • ½ cup (40g) finely grated parmesan
  • ¼ cup chives
  • 6 eggs
  • 1cup self raising flour, sifted (For a Gluten free option you could use Gluten Free flour with one teaspoon of baking powder)
  • salt & pepper to season
  1. Preheat oven to 180 degrees.

  2. Heat oil in a large frying pan over a high heat,add onion,garlic & bacon & cook for 5 minutes or until golden.

  3. Place in a bowl with the zucchini, feta, ricotta, parmesan,chives, salt & pepper, mix to combine. Place whisked eggs & flour in a bowl & mix to combine, add the zucchini mixture & combine.

  4. Spoon into a lightly greased 20cm-30cm oven proof dish & bake for 40-45 minutes or until golden brown & cooked through.

  5. Cut into slices & serve.
