Zany Zeus Spanakopita

Ingredients

Method

  • 1 bunch of Silverbeet
  • 250g spinach
  • 1 bunch chives, finely chopped
  • ½ bunch dill, finely chopped
  • 250g Zany Zeus ricotta
  • 250g Zany Zeus Classic Feta,crumbled
  • 3 eggs (whisked)
  • 1 teaspoon dried oregano (preferably greek)
  • zest of one lemon
  • 1 pkt filo pastry
  1. Preheat oven to 220 degrees.

  2. Cut the thick,woody stalks from the silverbeet & spinach leaves,blanch the silverbeet & spinach leaves in boiling water for 2 minutes,drain & run under cold water & wring out any excess water in a tea towel.

  3. Chop very finely & mix with chives,dill,zany zeus ricotta,classic feta,eggs,oregano & salt & pepper to season.

  4. Grease a 27x17cm baking tin and line with at least 4-6 layers of filo pastry,letting it go up the sides.

  5. Spread filling over the filo base then spray sheets of filo with cooking spray & scrunch up & place over the mixture till covered.

  6. Bake for 15 minutes until golden brown,then reduce heat to 200 degrees & cook for a further 15-20 minutes until cooked through.

Serve with lemon wedges.
