Zany Zeus Smoked Ricotta Polpettes with Sage Butter

Serves-4
Suitable for Vegetarian's and is Gluten Free if using Gluten Free flour

Ingredients

Method

  • 400g zany zeus smoked ricotta
  • 300g fresh baby spinach
  • 1 lemon,zest
  • 1 egg,whisked
  • ½ cup grated parmesan
  • ½ cup plain flour(use gluten free flour,for gluten free option)
  • 2 tablespoons toasted pine nuts
  • ½ tsp chilli flakes
  • ¼ teaspoon ground nutmeg
  • 80g butter
  • 1/3 cup fresh sage leaves
  1. Wilt spinach,drain of excess liquid,finely chop & place in a bowl. Add smoked ricotta,lemon rind,egg,parmesan,half the flour,pine nuts,chilli & nutmeg stir till combined.

  2. Roll mixture into heaped tablespoons and form balls and place on a plate. Lightly coat the polpettes in remaining flour.

  3. Bring a large saucepan of salted water to the boil. Once boiling reduce heat to medium, add six polpettes and cook for 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and place on a baking tray. Continue to cook remaining polpettes.

  4. Heat butter in a frying pan over a medium heat until melted. Add fresh sage leaves and cook till crispy and place on a paper towel. Continue to cook the butter for 2-3min or until it turns a golden nutty colour. Transfer the polpettes to serving plates and drizzle with butter, then sprinkle with crispy sage leaves.
