Zany Zeus Baked Lemon Cheesecake Slice

Makes 1 tray (sponge roll tins)
Suitable for Vegetarian's and Gluten Free if using Gluten Free Biscuit option

Ingredients

Method

Base
  • 250g of Biscuit crumbs (can use Gluten Free for a Gluten Free option)
  • 250g Butter (melted)
Filling
  • 2 cups of Caster sugar
  • 1 kg Zany Zeus Cream Cheese
  • 4 Eggs
  • ½ Lemon juice & rind
Topping
Zany Zeus Cream Cheese Icing
  • 250g Zany Zeus Cream Cheese
  • 1 cup caster sugar
  1. Spray the sponge roll tin then line with baking paper, melt the butter & mix with the biscuit crumbs then place in the tin,smooth with a back of a spoon,till flat. 
  2. Mix together  Zany Zeus cream cheese & caster sugar till sugar is dissolved,add eggs and whip till combined. Add lemon juice & rind to cream cheese mixture,mix till combined.
  3. Then pour into prepared base tin & bake at 150 degrees for 50 minutes,sticky to touch, leave to cool before icing.
 
Zany Zeus Cream Cheese Icing
  1. In a mixing bowl place the cream cheese & castor sugar, whip till sugar is dissolved and cream cheese is glossy.
  2. Spread over chilled cheesecake & cut into desired size pieces.
