Baked Zany Zeus Ricotta

*Suitable for vegetarians & Gluten free



  • 500g Zany Zeus Ricotta
  • 1/3 cup semi sun dried tomatoes,chopped
  • 1 tablespoon capers,finely chopped
  • 2 tablespoons chives,finely chopped
  • 1 tablespoon thyme leaves
  • 1 tablespoon olive oil
  • salt & pepper to season
  1. Preheat oven to 180 degrees.

  2. Grease & line 4 large texas muffin tins with baking paper.

  3. Combine ricotta,sun dried tomatoes,capers,chives,thyme,salt & pepper in a bowl. Spoon into muffin tins,pressing firmly.

  4. Bake for 30 minutes or until golden brown & firm to touch. Gently turn onto a wire rack  & allow to cool.

To garnish put a little oil in a frying pan on a medium heat,when hot add capers (about one tablespoon) & cook till they split open. Put capers on top of each baked ricotta with thyme leaves & sprigs.
Serve with crusty bread or crackers as a side or with a salad as a main meal.
